Cheese for an outdoor event is a different problem from cheese for a counter plate. Temperature, travel time, and the absence of a refrigerator all matter. After ten summers of packing provisions boxes in Kyoto, we have a clear view of what works and what does not.
The Problem with Soft Cheeses in Summer ¶
A soft washed-rind like the Omi cheese from Shiga is excellent at the counter, where it sits at room temperature for a controlled period. In a box that will be carried on a bicycle or left in a bag for two hours in July heat, it becomes a problem. The paste softens past the point of pleasure and the rind can develop off-notes. We do not include the Omi washed-rind in summer provisions boxes for this reason.
What Travels Well ¶
Semi-hard and hard cheeses are the right choice for outdoor eating. The aged Hokkaido gouda holds its texture for three to four hours at summer temperatures without significant change. A firm pecorino-style cheese, when we have one in stock, is equally. The key is a low moisture content and a firm paste. These cheeses also slice cleanly in the field, which matters when you are working without a proper board.
The Role of Accompaniments ¶
A cheese on its own at a garden party is a limited thing. The accompaniments do a lot of work. The cherry mostarda cuts through the fat of the aged gouda and keeps the palate interested. The rye crackers provide texture without competing with the cheese. The house grain mustard is there for the cured meats but it also works with a firm cheese. We pack all three in every summer provisions box for this reason.
Temperature Management ¶
We pack provisions boxes with a small ice sheet under the base layer. This keeps the contents below 15 degrees Celsius for approximately two hours in typical Kyoto summer conditions. If you are travelling more than two hours or leaving the box in direct sun, add your own ice. We are honest about the limits of our packaging. The box is designed for a garden party, not a day-long expedition.

If you are putting together a box for a specific event and want to discuss the cheese selection, call or email us five days ahead. We can substitute items based on what is on the counter that week and what will travel best for your particular situation. We have done this for events ranging from a two-person picnic in Maruyama Park to a forty-person corporate gathering in Fushimi.
